Quito is a fascinating city to explore.  Its colonial architecture along narrow streets and lively plazas are surrounded by mountains, so you are guaranteed some astonishing views too.  Two hours or so to the North is Otavalo, famous for weaving and other artisan crafts since pre-Inca times.  Further south is Cuenca with its cobbled streets and domed churches perched above the banks of the Rio Tomebamba.
